Low Fat Chocolate Pudding for Two

Chocolate pudding is a wonderful dessert, but usually high in fat and calories. This recipe tastes like it has all the fat, and will leave you wanting more.

To reduce fat and calories further, substitute 2 percent milk for the whole milk; the pudding will have a slightly looser consistency. Don’t use 1 percent or skim milk; or the pudding won’t be worth eating. Once the pudding comes to a boil, make sure to simmer it for a full 2 minutes to cook out the flavor of the cornstarch.

Ingredients

1 ounce bittersweet chocolate, chopped
1 tablespoon cocoa, preferably Dutched
2 tablespoons cornstarch
1/4 cup sugar
Pinch table salt
1 1/4 cups whole milk
1 teaspoon vanilla extract

Bread Stuffing

1 cup chopped celery (with leaves)
1 cup chopped onion
1 stick margarine
9 cups bread cubes
1 tsp salt (or more if needed)
1/2 tsp black pepper
1 tsp ground sage
2 cups chicken broth

If using fresh bread, open the bread a day before and let it set out in a place where it won’t be disturbed. When it is slightly dry begin to slice it or put it in the food processor a few pieces at a time and pulse a couple of times.

Mashed potatoes

  • 2 Lbs. Russet Potatoes (8-10 medium sized potatoes)
  • 1 stick of butter or margarine
  • 4 oz or more of cream cheese (softened)
  • Milk or half and half
  • salt

Directions

Peel the potatoes and cut into 1 inch cubes. Place the potatoes in good sized pan cover with water and add a tablespoon of salt. Boil until they are fork tender (about 20 minutes)
